Some more tweaks for simulation server and dashboard

  • Fix a get_stats spot in tests that I missed in the last PR
  • Some tweaks to the workload config option, it now defaults to "replay" when --replay is set instead of None
    • This aligns better with how the dashboard displays workloads
  • Add missing dep used by fastsim scheduler
