ultimate-doom-builder: init at 0-unstable-2026-02-01

Ultimate Doom Builder is an advanced Doom map editor based on Doom Builder 2
with Mono support for cross-platform compatibility.

The build system uses git commands to generate version information. These have
been patched to use static values since the source doesn't include .git
directory. Adds unstableGitUpdater for automatic updates.
